Sooooo Good Chocolate Chip Cookies aka "crack" (what my husband calls them) -
Adapted from Maria's "HEALTHIFIED" Chocolate Chip cookies
1 cup coconut oil or butter (I use coconut oil - unrefined)
1 cup Just Like Sugar (take a Tablespoon + if you like a less sweet cookie)
1/2 cup erythritol (take a Tablespoon away if you like a less sweet cookie like we do)
1 tsp stevia glycerite
1 egg
1/2 cup coconut flour
1 tsp aluminum free baking powder
1 tsp Celtic sea salt
Preheat the oven to 325 degrees F. In a medium bowl, cream for a couple minutes the coconut oil, Just Like Sugar, erythritol and stevia then add egg and vanilla. In a separate bowl mix together the almond flour, coconut flour, baking powder, and salt. Slowly add in the dry ingredients to the wet and mix until smooth. Add in chocolate and walnuts. Roll 1 - 1 1/2 TBS of dough into a ball in your hands onto a cookie sheet lined with parchment paper about 2" apart, place small sheet of parchment paper on cookie, press down with a flat bottomed glass so they are about 1/4 of an inch thick. Bake in preheated oven for 17-20 minutes or until golden around the edges. Watch carefully. Cool on baking sheet for a couple minutes transfer to cooling rack. I make these small. About 40 cookies.
